Cabernet Sauvignon

The Cabernet Sauvignon is definitely the king of red grapes. Kedesh Valley’s Cabernet Sauvignon has proved to produce high quality wine for over than 20 years. That is why our Cabernet grapes are highly desired among winemakers in Israel. The wine ages in a special 2000 liter oak barrel which allows the fruit flavor to remain as pure as possible and still acquire a refined taste of the barrel. It is an elegant wine that leaves intense fruity flavors

Vineyard:

The Cabernet Sauvignon grapes grow in a single vineyard. The vineyards are located in the western edge of Kedesh Valley in the Upper Galilee.

Harvest:

The grapes were harvested in the early morning in a manual selective harvest. After cooling the clusters, when grapes have reached the right temperature, they are sorted again in order to remove unsuitable clusters, branches and leaves.

Production Process:

After arriving at the winery, the clusters are transferred to a cooling room to decrease the grapes’ temperature. When grapes reach the right temperature, they are sorted on a conveyor belt for another round of inspection, in order to remove unsuitable clusters, leaves or branches. The grapes are destemmed and transferred to a stainless, steel temperature controlled tanks by using a special peristaltic pump. The fermentation takes place in the tanks at 22-26 Co with regular shuffling to derive color, aroma and tannic substances. The wine is then pressed, left to clarify naturally and moved to our cellars for ageing. .

Maturation:

The wine ages in a special 2000 liter French oak barrel for 12 months then it is transferred into 220 liter French oak barrels for an additional 12 months. After bottling the wine is aged for 6 months in our cellar.
